Sweet chilli pork stir fry

This is a really simple recipe that is easy to scale up or down and you can also easily vary the ingredients to suit your tastes (or the current contents of your fridge!). It also only takes about 10 minutes to cook so it’s a great mid-week meal idea.

I used onion, courgette, carrots, mushrooms and baby sweetcorn but you can use any vegetables you like – just make sure to cut them into fairly small pieces, you want them to cook through quite quickly. I also used Asda’s rice noodles and Asda’s Butcher’s Selection Sweet Chilli Pork Stir Fry Strips.

Heat a little sunflower oil in a wok or large frying pan and add the onion and pork. Fry for a few minutes, until the meat is almost cooked. Add the vegetables (hardest first, then the softest). Boil the noodles in a separate pan. Keep stirring the meat and veg so it doesn’t stick and fry until the vegetables are cooked to your taste and the meat is cooked through.

Drain the noodles. You can add them to the wok and stir for a couple of minutes or just serve the meat and veg on top of the noodles.
